This past Saturday, I went over to Mom and Dad's to help make summer sausage. It turned out so good! I think we made a total of 22 rolls in all. We used up the last of their elk meat and then a second batch of beef/pork. It sure is a procedure, though. Dad and John had already ground it once and seasoned it, but we had to grind it again. Then we put it through the mixer and added the dry milk and binding agent. Then you have to stuff the casings. John loves that part. He gets to turn the crank and really work out his arm! It's jello today. Because you have to get the meat in there so tight, it makes the cranking extra hard, so he's really feeling it the last couple of days. It was a lot of fun to help out.
